can I install one instance of Mint on Domain A and track Domain B (& C, D, …) with it?
Is one license enough in this case to track one domain (B), right?

Correct. Mint is not designed to track more than one (non-mirror) domain from a single installation. Even multiple installations on the same domain to track individual external domains might create problems if the sites being tracked have overlapping visitors since the cookies used to determine uniques will all be set by the same domain (making it impossible to distinguish a unique visitor on Domain B from a repeat visitor on Domain C, etc).
